Lately, I'm Obsessed

1. I.cannot.stop.drinking.LaCroix. I.am.obsessed.with.this.sparkling.water. My current favorite is the Peach Pear. I mean you should see the recycling bin at work....

2. My last few Sunday mornings have been spent poring over my latest cookbook purchases. How Sweet Eats and Dashing Dish (plus the Dashing Dish Devotional), these girls did amazing jobs with their books. Which, of course, comes as no surprise. Have you checked out their blogs?! I've been following these chicas for years and am super excited for them.

3. So, Mr. Darcy has his own Instagram account. You can follow him here @thedarcychronicles.

This is completely ridiculous, I know. You can blame Mr. B. It was his idea. He was jealous of all the other corgis out there with accounts, and I mean a plethora of corgis with accounts. Where do people find the time to manage it??! When I walk through the door, Mr B is all "Have you posted a photo today? Have you seen his number of followers? You need to post for them! They want to know what he's doing." Hello? I don't even know what I'm doing. He is getting crazy.

4. Reading all of the new Youth Media Award WINNERS. They were announced this past Monday. I must get on this. Drop everything and put these suckers on hold. So said every present (and past, ahem,) Youth Services Librarian.

5. Ummm, did I mention I'm going to see GARTH BROOKS tonight??!!!!! GAHHHHHHHH! I can't sit down. I can't focus. I may just put on some music and feed the preschoolers sugar for story time today.  We all need to get excited! I think his "People Loving People" would be appropriate.... I'm sure it's best I'm only working half a day. I'm sure it's best for all. GAHHHHHHHH!

And if this happened?

I.Would.Have.Died. Right.There.Y'all.

AFTER the song, of course.

Currently

I'm currently....

Watching...heading to the theater to see American Hustle with my friend. It's friend date night, and I'm in desperate need of Jessica time. I haven't seen her since this. (Also, a little Jeremy Renner never hurt anyone, either. wink, wink)

Eating...a vegan diet. I'm in the midst of a 28-day yoga challenge. In Mandy Ingber's book, Yogalosophy, she provides three meal plans to choose from, and of course I went with the most challenging one, the "green" food plan. Surprisingly, I am enjoying most of the recipes, like that tasty veggie stir-fry over brown rice pictured above, and I can't get enough of her vegan stew. However, I find myself not really missing meat, except when Mr. B is unenthusiastic about making his own dinner and the house smells like bacon or steak. I am terribly missing my Greek yogurt, and the thought of ice cream almost brings me to tears. (But I'm fasting all sugar this month as well. It's my usual January fast, to cleanse my system from all of the baked goodies I filled it with since Thanksgiving.) Although, I am happy to announce I don't need any sweetener in my morning bowl of oats. They're perfectly tasty without. (I previously drizzled some honey or agave on them.) *Note: I will be blogging on my Yogalosophy experience, so stay tuned!

Planning...would you believe it, I'm busy planning for Summer Reading 2014! "Fizz, Boom, Read" seems to be all I can think about. I'm not that great at science stuff, nor do I have the patience for it, and I am annoyed when experiments don't turn out because I feel I wasted my, I mean the library's money on supplies. Jessica, I will be picking your brain quite often over the next few months; my deadline is April.

Reading...This month my book club is reading the YA novel, Code Name Verity, and based on another blogger's review, I picked up Calling Me Home, by Julie Kibler.

Inspired by...I am getting ready to start an online Bible study, Intentionally Focused, with a group of girls. I'm very excited about digging into my Bible and finding some peace and focus in the wee hours of the morning. Also, all the "extras" that come with the Yogalosophy challenge are quite inspirational, like journaling, making gratitude lists, and breathing.

Excited about...a three-day weekend! Book club next Friday! Getting back to my weekly yoga classes next month! And did you read what I'm doing tonight....

Also, It's National Hot Tea Month!

The only thing better than that is National Coffee Month.

I have been logging multiple cups of hot tea all month long, switching between green and black, depending on my mood. It's a welcome delight since this challenge has me limiting my caffeine intake. And I will not drink decaf coffee unless I am forced, and sorry my friends, that time has not yet come.

So grab a pot, a mug, and some tea. And thoroughly enjoy each sip :)

Sweet B's Most Popular

It's been almost two years now and out of all the recipes I shared on Sweet B, my Cold Vegetable Pizza has blown the other recipes out of the water! I mean, good night (!), there were many other dishes high up there, but the reviews and re-pins of those aren't even close*. I'm pretty excited because this Cold Pizza is pretty awesome. It's fast, simple, and tasty, which makes it a great crowd-pleaser. But if you have men around, like Mr. B, they each might need their own. Just giving you a heads up. Annnd, it's very versatile; just throw on whatever vegetables you have on hand...a great way to clean out the fridge.

Anyhoo, let's dig in to the recipes y'all can't get enough of and re-visit most often.

However, first I want to talk about my honorable mention, Chicken Wild Rice Salad. Mainly because it's a perfect dish for this time of year (any time of the year, really,) and it's even better when you make a big batch of it on Sunday and take it to work for lunch all week long. The flavors have a chance to settle and merry, and the salty rice with the savory chicken with the crunchy almonds and the sweetness of the cranberries and carrots and the strong spices are...beautiful. Delicious. It's by far one of my favorite and most go-to recipes.

And now here's a look at your top 10 favorites.

#10 Three-way tie between Lemon Bread, Spiced Apple Stir-Fry, and Zesty Broccoli Dip.

Y'all can't decide which you like better, the smell of fresh lemon bread floating through your kitchen, the apples and spice concoction which is best over vanilla ice cream, or the hot and cheesy broccoli dip with crackers. I don't blame ya, I couldn't choose either!

#9 Blueberry Zucchini Bread

While this hasn't been available as long as some of the other recipes, this delectable, summer bread has made it into your top 10 and, I must say with all of the feedback, I'm shocked it's not number one. I'm beyond happy to hear my readers love zucchini bread as much as I do (...just maybe not the grating part).

#8 Perfect Granola Bars

Yes, I do mean perfect when I say perfect, especially since this recipe is a great base for other protein granola. Whether you leave it in bar form or crumble it on top of yogurt or add it to milk, this granola is versatile, simple, and healthy! Also, it makes a great neighborly gift around the holidays....

#7 Tiramisu Cheesecake Bars

To be honest, I forgot all about these scrumptious bars completely. You, however, have not. I'm thinking I might get back in the kitchen to whip up a batch of these pretty soon. Chocolate, cream cheese, hazelnut coffee, and cookie dough all sound way too yummy right about now.

#6 Browned Butter Cookies with Caramel Frosting (a.k.a. Mr. B's favorite)

If I didn't know any better, I'd say Mr. B might have had something to do with the ranking of these cookies. But I do know better. Because every Christmas these little bites of heaven are the first cookies asked for and the first to disappear from the cookie platter. They are at the top of every holiday to-bake list. Every.one.loves.these. No matter how many batches or double batches I bake, I can't seem to make enough of these!

#5 Raspberry Banana Protein Shake

Yay! My protein shake sparked some interest. And from what I can tell, many of you like raspberries, so I will try to feature a few more berry-filled recipes! I can't tell you how many times my smoothies save me from leaving the house famished in the morning. They're quick to throw together, and out the door you go. And frozen berries work just fine, too.

#4 Grandma Barb's Cut Outs

Shout out to my Grandma Barb and her mouth-watering secret cream cheese sugar cookie recipe that has been a family staple for ages. (Well, it's not a secret anymore, and btw, don't tell her that!) No matter what holiday we're celebrating, or who's hosting, these cookies will be there. They will be in sight, easily available, and one can be found in each hand. I'd be disappointed if these didn't make the list.

#3 Beef Stroganoff

This has been on the site the least amount of time and has soared through the ranks. Given time, I'm sure it will give my Cold Vegetable Pizza a run for its money. And why shouldn't it? Everyone loves classic, comfort food. :)

#2 Almond Blueberry Cookies (my favorite)

We like our desserts around here. Apparently, so do you, which is why we're life-long friends, you know?

Which is also why this top 10 is littered with delicious, sweet recipes. But these take the cake err, cookie. My Almond Blueberry Cookies are my absolute favorite cookie in the entire world. Ever. And I'm ecstatic to see you think so, too. I tend to lean on the healthier, lighter side of sweets. Replacing ingredients, making recipes "better" for you so you don't feel guilty about eating that slice of cake, or about the eighth cookie you just devoured. But not these babies. I only make them at Christmas and I splurge. Don't ruin a favorite. (Which is what Mr. B tries to tell me every time I try to "healthify" his chocolate chip cookies. But, in my defense, I never mess with his Brown Butters ---> see above.)

If I was sick the entire month of December, and couldn't make a single cookie, I'd find some way to make these. Mr. B can rely on my friend to make his Brown Butters, and the rest of the family can rely on Grandma Barb for the cut-outs, but these beauties...I will make them. They might not make it to the oven, but I will enjoy this cookie. By the spoonful, if needed.

#1 Cold Vegetable Pizza

And, of course, your all-time favorite.....

Enjoy!

*These top 10 selections were polled the last Sunday, prior to this post.

Keep visiting; I love to hear your feedback!

What I'm Reading

I've been a busy little reader. And while my "read" list is ever-growing, my "to-read" list doesn't seem to budge. Hmmmmm.....

The Red Garden (Alice Hoffman)
Fall Book Club Read

By far this has been my favorite recent read. It's comprised of short-story like chapters depicting a small town in Massachusetts and its inhabitants spanning a few centuries, from it's founding in 1750 to (what seems) present day. The way the stories are set-up allows for easy reading before bed and doesn't necessarily require you to remember everything about each character or scenario. It's much easier for me to pick out the one story I didn't care for verses trying to decided among many which is my favorite. Hoffman's writing is intriguing and unforgettable. I definitely suggest picking up this read!

City of Bones (Cassandra Clare)
The first book in the Mortal Instruments series

Ugh. I read the first and second installments in this YA-Stephenie-Meyer's-world-meets-Buffy-and-other-creatures-of-the-night-stuff series, and while it's better than Twilight, it's not by much. I recommend skipping this series and just watching the movie (although I'm forgoing that as well; it barely made anything in theaters). I find it hard to believe Clare still has a plot for a sixth book.

Mr. & Mrs. Fitzwilliam Darcy (Sharon Lathan)
The entire Darcy Saga, books #1-5
Re-read #1-2.

This saga is definite fluff when it comes to my reading shelf. I normally don't like when other authors carry on someone else's story, adding more to beloved characters. However, as I said this is fluff reading, and it entertains me when I'm in the mood for something quick, easy, and light. And who doesn't want to hear more about Mr. Darcy and his beautiful estate? Yet, while entertaining and very corny, Lathan does give the leading man characteristics I'm positive Austen would find disapproving. But, you must take it for what it is. Fluff.

The Duck Commander Family
(Willie & Korie Robertson)

This show. I can't get enough. It cracks me up. The Robertson's crack me up. It's nice to see fame and fortune don't always change people. I've never been a huge fan of Willie; he seems whiny and self-absorbed on the show. But reading about his life, values, faith, and determination was inspiring and, I'll admit, quite surprising. I learned a few things I didn't know, as well, and am looking forward to reading Phil's book Happy, Happy Happy.

White Jacket Required: A Culinary Coming-of-Age Story (Jenna Weber)

I've been a follower of Jenna's blog, Eat, Live, Run, for a few years now and was extremely happy for her when her book was published. (I'm just so sad it took me this long to finally get a hold of it!) Reading about her culinary school and life experiences was enlightening, inspiring, and motivational. Her writing is very straight-forward, not groundbreaking or anything, but heartfelt and full of truth, doubt and, at times, pain.

And here's a sneak peek at my "research" pile. I enjoy learning about food, the body, nutrition, and what diets are current fads. I like to know my stuff, and while I never diet myself, I'm constantly changing up my own eating habits...to keep my metabolism guessing, when my food seems too routine, when I'm bored, or want to try something new. Plus, I like the challenge. I finished 5:2 and VB6 and discovered I already use a combination of these "diets" in my own lifestyle. Kudos to me.

7 Days 1 Challenge: Fifteen

Oh my goodness, this weather is gorgeous!

My foot is starting to feel better, so the hubby and I took advantage of the sunshine and walked to the park yesterday. It was lovely. It's so nice to see others enjoying the park, especially the dog park. It's feeding my dog fever. I want one. And right now I'm trying to talk Mr. B into getting a Shiba Inu (since clearly my Chihuahua is out of the question).

I mean, come on. How cute is this little guy? I want him. I want to take him to the dog park and have everyone gush over how cute he is. And then I want to come home and snuggle. Because I'm not getting it from Mr. B or Siamese.

[Heavy sigh] I digress.

Anyhoo. The challenge.

*In case you're new to these challenges, the challenge starts on Monday and ends Sunday night. The following Monday I'll post a new challenge.

This week's challenge:
Pilates every day.
Source: Google Images
Since my foot seems to be healed (praise the Lord!) I am eager to get back into my workout routine. But I'm up for something different, and Pilates are calling my name. I think it's because the routine is similar to yoga but with more cardio. There are a ton of Pilates videos on the web, so start Googling and get that booty movin'!

Here's a great site to get your Pilates fix.

7 Days 1 Challenge: Two

Okay, I've rid the house of five un-used items, and feeling de-cluttered and a little more organized, I think we should keep this ball rolling. Therefore, this week's challenge is sort of in the same direction...

*In case you're new to these challenges, the challenge starts on Monday and ends Sunday night. The following Monday I'll post a new challenge.

This week's challenge:
Make a list of goals.

I'm not big on the word "resolution." It's similar to my dislike of "diet." Society has given these words negative connotations, I believe, and people tend to shy away or disapprove, etc. ("dieting" because I'm too fat, but only for a while.... or "resolutions" are usually broken....).

New Year's Resolutions.

Goals for the New Year.

The latter sounds much better and is more optimistic. So let's get out those notepads, open a document or jot down a few goals and email them as a reminder. What are your goals for the new year?

Check out Stickk.com, "the smartest way to set and achieve your goals." The site acts as a virtual commitment journal, something new I'm aiming to try out this year.

Who wants to take the weekly challenge? Let me know by sharing your thoughts/struggles and link ups below!

Sweet B Turns One

HAPPY BIRTHDAY!

A year ago today I embarked on my own blog journey. And it's been fun, eventful, liberating, inspirational, and delicious.

Some of my favorite (and most popular) posts were about Lucky Charms, my favorite cookies, my first story time, holiday baking with my best friend, a delightful salad, themed parties, a variety of sweets, a new home, and my life in the library.

I have some ideas in motion and plans for Sweet B's Impressions this next year, including more recipe reviews, fitness posts, book talks, and challenges. But, most importantly, I want to share more of my family dishes and my faith. I feel those were the two topics which motivated me to begin my blog in the first place, and I need to bring them to the forefront. My faith is my foundation and food is what brings people together at the table, where we share our days and love for each other. Actually, food and faith are equally present at my dinner table, and I'm encouraged to display that here on Sweet B's.

I'm happy to share my life and food with others, and am always happy to inspire new dishes and change in my readers' lifestyles. I'm very thankful and blessed that friends, family and strangers take the time to read what I have to say or cook. Please continue to comment, sharing your thoughts...and I really enjoy reading what you have to say....and feel free to suggest any recipes or challenges you may like to see on Sweet B's. I love hearing from you all.

It has been one year (and it went so fast) and I knew I had to celebrate in some way.

One of my favorite go-to desserts when company drops by or I need to make when short on time is the puff pastry. It's a blank canvas, allowing me to constantly invent new desserts with whatever ingredients I have on hand. It's lovely. It's delicious. It's fabulous.

I call these my Puffs. I've made Banana-Peanut Butter Puffs, Apple-Caramel Puffs, Berry and Cream Puffs, and many more. BUT, I have one rule: No more than five ingredients....including the puff pastry dough. So I thought what better way to celebrate turning one than to share one of my classic Puffs. And what do I have an abundance of in my refrigerator...strawberries. So here it is, my Balsamic Strawberry Puff. (Ohhh, strawberries and balsamic vinegar....a favorite combo.)

Balsamic Strawberry Puff
*Serves 6

1 sheet puff pastry dough, thawed
strawberries, sliced
honey
balsamic vinegar
whipped topping (I'd prefer vanilla ice cream here, but I was all out.)

Unfold the puff pastry as directed on package and place on a baking sheet lined with parchment paper (or sprayed really well). Pinch up the sides, creating an edge so the filling won't fall out. Arrange strawberry slices on top of pastry. Brush berries with equal parts honey and balsamic vinegar.  (Make sure the berries are coated, but not soaking wet.)  Bake at 375 degrees for 25 minutes. Garnish with whipped topping and serve warm.

Dishes Around the Blog World

How Sweet It Is. Dashing Dish. Iowa Girl Eats. My Baking Addiction.

Espresso and Cream. Eat, Live, Run. Yes, I Want Cake.

And of course, The Pioneer Woman.

These are my absolute favorite food blogs. I've been known to spend hours skimming their posts for delicious dinner ideas. I love the mixture of healthy, decadent, hearty and classic recipes that I find on these sites.

[If you aren't familiar with these blogs, check these ladies out!]

I enjoy my fellow bloggers so much, and I am constantly inspired to create their mouth-watering recipes or use them as inspiration. So, without further ado, here are a few of the dishes I'd like to serve at my table in the near future:

Blackberry Jam from Yes, I Want Cake. Mr. B and I have been eating blackberries like crazy....probably because they're dirt cheap at our grocery store and we keep buying them in utter amazement. I'm sure the price will jump soon, but I'm hoping to make this before it does!

Asian Chicken Salad from Dashing Dish. I need a new work-lunch salad, and this looks amazingly delicious.

Meyer Lemon Strawberry Muffins from My Baking Addiction. I have to get me some of these lemons!

Almond Milk Ice Cream from Espresso and Cream. I've been craving almond milk lately, and besides cooking my oatmeal in it, this would be a great way to use it.

Brussels Sprouts with Balsamic and Cranberries from The Pioneer Woman. I'm obsessed with a huge fan of Ree, and I'm in love her Food Network show!! And I can't wait for her new cookbook!

Creamy Tuscan White Bean Pasta from How Sweet It Is. Just look at that creamy goodness. Mouth-watering.

Gnocchi with Fresh Arugula Walnut Pesto from Eat, Live, Run. Gnocchi is my absolute favorite Italian dish. It's a must on my "last meal" menu [although I love food so much I have to have a "last day" menu].

Chicken Caesar Sandwiches from Iowa Girl Eats. I have these ingredients, and it would be perfect for an easy lunch for work.

Have you found any recipes from your favorite food blogs that you must try ASAP? Share them in the comments below!
